Eric Watson is the Director of Culinary Operations at Fargo Country Club. He oversees all culinary operations for our banquet facility, as well as the restaurant, lounge, pool, and golf concessions. Originally from Colorado, Eric received his culinary degree from Colorado Mountain College. He started his culinary career and spent many years honing his craft in Summit County, Colorado cooking in various restaurants within Vail Resorts. Eric has also lived and worked in Rhode Island, Hawaii, and Arizona. In 2003, Eric moved to Fargo-Moorhead with his wife, Sara, who is from Glyndon, MN. Eric and Sara started their local career by creating Mosaic Catering. The Watsons continued sharing their culinary vision by opening and operating Mezzaluna located in downtown Fargo. After falling in love with Moorhead, MN, they also created Rustica Eatery & Tavern. Working as an adjunct faculty at local culinary schools, Eric is heavily involved with the area chef’s association. In addition, Eric oversees a culinary apprenticeship program at FCC with the goal of attracting and retaining talent within our vibrant culinary scene of Fargo-Moorhead and the surrounding areas.
